This is the frosted Christmas glory that is my mother's Carrot Cake recipe. I usually make cupcakes instead of using a loaf tin to ensure some kind of portion control and stop me from inhaling the whole damn thing when it comes out of the oven steaming. I've tweaked it a little, to create my own version but she's the genius who engineered it. SO yummy. I freakin love xmas...
